
Generally considered a peasant's dish, the combination of roasted tomatoes, eggplant and zucchini topped with fresh rosemary and drizzled with extra virgin olive oil can be a manna from heaven and is often served in the Mediterranean. Not done in the traditional style, but also referred to as a type of ratatouille by Catalan friends.
This dish was presented by a friend for an evening dinner party and as soon as it came to the table, I had to photograph it because it was so strikingly beautiful in its simplicity. And as for taste--it was delectable!
Roasting the vegetables in a hot oven for up to 30 minutes is an easy way to create a winning dish. No fuss--just good simple food!
