One of best things my Grandmother EVER baked was her Zucchini Bread. It was a great treat when we would go for a visit!!! She would use her overstock of zucchinni when she had a great crop.

I especially LOVED it when it was cooked in tin cans because it was round - but mostly it came out of the loaf pan :D

Grandma Dorothy's Zucchinni Bread


Preheat oven to 350 degrees.
3 eggs
2 t. vanilla extract
2 cups sugar
1 t. black walnut extract
2 cups grated zucchini
1 t. almond extract
1 c. vegatable oil
3 cups sifted flour
1/4 t. baking powder
2 t. baking soda
2 t. cinnamon
1 t. salt
1 cup pecans or walnuts

Beat eggs lightly in large bowl.
Stir in oil, sugar, zucchini and flavorings.
in a different bowl sift flour, baking powder, baking soda, cinnamon and salt.
Stir into egg mixture untill well blended.
Stir in pecans or walnuts.
Pour into 2 well greased 8x5x3 loaf pans.
Bake for 1 hour or until center springs back when lightly pressed.
