One of my favorite foods, is a garden fresh tomato. When i was very young, I would help my mother in her garden. When we finished picking the veggie. She would wash a tomato, hand it to me and say " now close your eyes and take a bit, you can almost tast the sunshine" My recipe is for Green tomato Parmesan: 5 Good size green tomatos, 1 cup sesoned bread crumbs, 1 egg beaten, 1 good hand full of parmesan and romano cheese, slice the green tomatos thin. add parmesan and romano cheese to bread crumbs and any other spices you like. take the beaten egg, and dip the slices of tomato, then cover in bread crumbs and cheese. fry in olive oil till golden brown. then in baking dish layer tomatos, sauce, tomatos, ect. Bake at about 350 for 45 min. then top with Mozzarella and bake for another 15 min. And you thought ... what am i going to do with all these green tomatos.
