This watercolor painting is of a greek coffee cup with worry beads (komboloi). The title is how you would order a semisweet cup of coffee in a demitasse cup. This painting represents a nostalgic memory of afternoon coffee time in Greece. It is a typical Greek man's relaxing moment - coffee in one hand and kompoloi in the other - .

Metrios Coffee: Greek coffee is made in a small pot (2 - 6 cup capacity) called briki and is served in a demitasse cup.

For each cup of coffee:

1 demitasse cup of water

1 rounded teaspoon of Greek coffee

If sugar is required, it is added to the cold water before water boils.

sugar to taste: no sugar for plain (sketos)

1 tsp. sugar for medium (metrios)

2 tsp. sugar for sweet (glikos)

Stir well. Place on heat and bring to a boil. As soon as the coffee starts rising to the rim , take it off the heat and pour a little bit of the froth into the cup. Put it back on the burner and let the coffee rise a second time. Pour into the demitasse cup.

Let the coffee stand a minute to allow the grounds to settle to the bottom of the cup.
