I painted The 3 Habeneros last summer and one of my favorite uses for them is fresh salsa...Muy Caliente! Habaneros are not for the faint of heart. I use my father in law's recipe which has been handed down verbally.

  • 3-4 red juicy ripe tomatoes
  • 2-3 habanero peppers
  • a few cloves of fresh garlic
  • a handful of fresh cilantro
  • a few pinches of salt
  • a quarter of an onion
Directions: Roast the tomatoes and habaneros over an open flame (works when you fire up the barbie to make something else), when the skin starts to wilt and darken, remove from fire, remove outer skin. In a food processer or blender, pulse grind onion, peppers, salt, cilantro, garlic. Add tomatoes and gently pulse for desired consistency. Less grinding=chunkier salsa, more grinding=watery salsa. It's a personal preference. The habanero peppers lend a smokey, spicy flavor to the salsa and is perfect with chips, steak, burgers, eggs...you name it!
